I made air fryer bread with 2 ingredients - better than sourdough




There's truly nothing better than a freshly baked loaf of homemade bread. So I've heard anyway - until very recently, I'd never attempted to make my own, put off by the constant kneading and waiting for the dough to prove in so many recipes.

So when I came across a bread tutorial on Instagram that only used two key ingredients, I was intrigued. The recipe was shared by Emily Scott, also known as What I Ate For Breakfast, and promised a delicious loaf with minimal effort. And even better, you can bake it in the air fryer - so I knew I had to give it a go.

In a short video, Emily revealed her foolproof bread recipe that requires just Greek yoghurt and self-raising flour to make. No yeast and no expensive oven dishes needed - and crucially, no waiting around for hours for the dough to prove.

In the caption, she said: "The texture isn't quite as light and fluffy as a loaf made with yeast (more similar to soda bread), but it's soft with a delicious, crunchy crust and perfect for toasting or enjoyed warm from the oven slathered with butter."

This sounded good enough to me, so I got to work on making my own loaf. I was not expecting anything special for my first attempt, but the end result was so impressive and I can't believe how easy - and delicious - it was. Here's how you can do it.

Air fryer bread 

Ingredients - for the dough

  • 500g self-raising flour
  • 475g Greek yoghurt
  • Pinch of salt (optional)

For the topping:

  • One egg
  • Splash of milk
  • Tsp sesame seeds

Method

First, weigh out your flour and yoghurt in two separate bowls.

To the bowl with the flour, add the salt and give it a quick stir. Then, add the yoghurt and mix with your hands, a spoon or a mixer until you've got a nice smooth dough, adding a splash of water if it's too dry.

Meanwhile, make your egg wash by whisking up an egg with a splash of milk - this is what's going to give it that gorgeous golden sheen when it's freshly baked.

Then, line your air fryer basket with greaseproof paper and pop in your dough. Brush the egg wash over the top, and top with sesame seeeds or whichever other additions you want. Using the bake setting on your air fryer, cook the bread for 40 minutes at 160C.

You'll know it's ready when you tap the bottom of the loaf and it sounds hollow. Mine needed a little longer so I put it in for another 15 minutes, but covered it with tin foil so it didn't get too burnt.

Not going to lie, I was terrified that the dough would rise too much and I'd have a real job on my hands trying to clean it off the mechanisms of the air fryer.

However, it turned out perfectly, and I couldn't wait for it to cool so I could tuck in.

The crust was so crunchy as I was cutting the bread into slices, with the inside of the loaf gorgeous and chewy - like sourdough but even better. After dishing it out to my family, they agreed that it was delicious, and they were in disbelief when they found out it was only two ingredients.

It's even better toasted, especially when served with butter or your favourite spread. This may have been my first time making bread, but it certainly won't be the last, especially when recipes like this exist.
