Achieve ‘extra fluffy’ roast potatoes with one quick extra stepRoast potatoes are often many people’s favourite roast dinner components. They are crunchy and golden on the outside but super soft and fluffy on the inside with a delicious flavour. However, they can be hard to master, and with so many recipes online, it can be difficult to know which one to try. Luckily, chef Poppy Cooks has shared a plethora of potato recipes throughout her career, including her ultimate roasties. The recipe serves two people and only requires three ingredients for the tastiest potato. Ingredients:Four Maris piper potatoes, peeled and cut into equal-sized chunks 100ml vegetable oil Plenty of salt Method:Place your potatoes into cold salted water and boil for 10 to 15 minutes until falling off the tip of the knife. Poppy said you don’t want them too mushy as they will not hold their shape. Next, drain the potatoes and leave them to steam dry in the colander with a tea towel over them for another 10 to 15 minutes to make them “extra fluffy.” Preheat the oven to 220C Fan and place the oil into a baking tray before putting it in the oven to get hot. Once the potatoes are ready, toss them in the tray to fluff up and then carefully pour into the hot tray with oil. Cook for 20 minutes, then remove from the oven. Turn the heat down to 180C Fan and return the potatoes for a further 15 minutes. Depending on your oven, they may need more or less time, so keep an eye on them.
