Creamy tomato soup recipe loved by Zara McDermott tastes 'phenomenal'




Now that the icy January weather is really settling in, many will be looking for comforting yet healthy meal ideas to enjoy whilst staying warm inside. 

And you really can't get much better than a delicious soup, with so many different flavour options to choose from. 

A classic tomato is always a good idea, but instead of reaching for the canned variety, why not try the healthier option of making up a pot from scratch? 

If you prefer a creamy tomato, then you'll want to take note of one recipe which was shared by Love Island and Strictly star Zara McDermott last year. 

Posting the recipe on TikTok, she described it as 'hearty, warming and wintery', and it pairs best with a succulent grilled cheese sandwich on the side. 

Like most soup recipes, there's minimal prep involved too - all you need to do is slice up your vegetables before roasting in the oven and then blending everything together. 

The addition of cream and creme fraiche really adds a touch of luxury to this dish, and when serving up, Zara drizzled a little more cream to give it that "restaurant quality."

And people in the comments definitely seemed to agree, with one person writing: "Love a good tomato soup, you seem like such a good cook."

Another wrote: "I had this the other day it was elite."

And a third penned: "Looks delicious!" 

Here's everything that you need to make this soup at home, which makes around four servings. 

Creamy tomato soup 

Ingredients

  • 1kg tomatoes 
  • Two red peppers
  • Bulb of garlic 
  • Olive oil 
  • Seasonings of your choice - for example, basil, oregano and thyme
  • Salt and pepper 
  • 200ml chicken stock 
  • One tbsp creme fraiche 
  • Two tbsp single cream, plus extra for drizzling
  • Bunch of fresh parsley

Method 

First, preheat your oven to 180C whilst you prepare the vegetables.

Cut the tomatoes into quarters, slice up the red peppers and cut the top off the bulb of garlic. 

Then, grab a baking tray and place your vegetables on it, along with a drizzle of olive oil and a teaspoon of each of your seasonings. Add some salt and pepper, and give everything a good mix to combine. 

Roast in the oven for about an hour, stirring halfway through to ensure nothing gets burnt. 

Then, take the vegetables out and add to a blender along with the stock, creme fraiche and cream. Blitz everything together before serving up into bowls. 

Add some extra cream on top along with some fresh parsley and more salt and pepper to taste, and enjoy.
