Posting the recipe on TikTok, she described it as 'hearty, warming and wintery', and it pairs best with a succulent grilled cheese sandwich on the side. Like most soup recipes, there's minimal prep involved too - all you need to do is slice up your vegetables before roasting in the oven and then blending everything together. The addition of cream and creme fraiche really adds a touch of luxury to this dish, and when serving up, Zara drizzled a little more cream to give it that "restaurant quality." Method First, preheat your oven to 180C whilst you prepare the vegetables. Cut the tomatoes into quarters, slice up the red peppers and cut the top off the bulb of garlic. Then, grab a baking tray and place your vegetables on it, along with a drizzle of olive oil and a teaspoon of each of your seasonings. Add some salt and pepper, and give everything a good mix to combine. Roast in the oven for about an hour, stirring halfway through to ensure nothing gets burnt. Then, take the vegetables out and add to a blender along with the stock, creme fraiche and cream. Blitz everything together before serving up into bowls.
