Nigella Lawson's 'fast and easy' crustless pizza recipe bakes in 30 minutes




There's nothing quite like a freshly baked pizza topped with salty, bubbling cheese.

However, traditionally, pizzas can be laborious to cook because they involve lots of preparation when it comes to making the dough.

But if your local supermarket's offerings aren't quite hitting the spot, you could try and make a quick and easy pizza in a pie dish.

The recipe from Nigella Lawson, which is featured in her book KITCHEN, bakes in just 30 minutes.

Nigella said of the recipe: "I wouldn't want to go bandying around the name of this recipe in Naples, but this is what I call it.

"If it helps, think of it as a cheese toastie, only without the bread. Whatever, it makes a fast and easy supper on days when you're too tired to think about what to cook. This gets made — pretty well makes itself — before you've even realised you're in the kitchen."

Nigella said home cooks could top their pizza with sweetcorn or snipped ham instead of chorizo - or anything you like.

She added: "There are plenty of times I've cooked this without any final addition: just egg, flour, salt, milk and cheese. This is comfort: quick time."

The recipe has been a big hit with Nigella's fans with some commenting on how much they love the recipe.

One person said: "This is such a delightful little recipe. You know things are looking up when you have a dinner that turns out like pizza, Yorkshire pudding, and toasted cheese joined forces!

"You can top it any way you like, and it is so easy to make. Whenever I am too tired to think of what to make for dinner, this is almost always the answer!"

How to make Nigella Lawson's crustless pizza

Ingredients:

  • One egg
  • 100 grams plain flour
  • Maldon sea salt flakes (to taste)
  • 250 millilitres full-fat milk
  • butter for greasing
  • 100 grams grated Cheddar cheese
  • 50 grams small chorizo or pepperoni slices

Method:

1. First, preheat the oven to 200°C/180°C Fan/gas mark 6/400°F. Then, beat the egg with the flour, salt and milk to make a batter.

2. Next, grease an ovenproof pie dish. Then add half of the grated cheese to the batter before pouring it into the dish.

3. Bake the batter for 30 minutes. Then, remove it from the oven, sprinkle it with the remaining cheese and add your toppings. Return it to the oven for another two to three minutes.

4. The pizza is ready when the cheese on top has melted and looks gold. Remove it from the oven and cut it into slices. Serve by itself or with a tomato salad.
