In his cookbook ‘Ramsay in 10’, Gordon wrote: “For a change, skip the bolognese sauce and make this creamy turkey and leek sauce in a fraction of the time instead. It might just become a regular midweek family meal, as it has at my house.” This recipe is fantastic for both children and adults to enjoy, but what also makes it so great is that it is very versatile as you can swap the meat, seasoning or pasta for another ingredient if you prefer. Gordon added: “You could also make it with minced (ground) chicken or sausage meat, and you can swap the sage for thyme, parsley or tarragon, depending on your preference. Any shape of dried pasta would work too.” MethodTo begin, fill the kettle with water, bring it to a boil, then pour it into a saucepan. Season with salt and then bring to the boil again. Place a large frying pan on a medium-high heat and add two tablespoons of olive oil. As the oil is heating, peel and grate the shallots and garlic, then add to a pan. Cool for two minutes, making sure to stir regularly. Give the pasta a stir and leave it to cook for two minutes or as per the pasta packet instructions. Pour cream into the frying pan with the turkey, an stir it until it comes to a boil, then reduce to a simmer until needed. Drain the pasta and leeks, but make sure to reserve two to three tablespoons of pasta water and add it to the sauce in the turkey frying pan. Chop up the parsley leaves, zest the lemon and add both to the pasta along with some salt and pepper. If you are making the crispy bread crumbs: Place a frying pan on a medium heat, then add olive oil, Chop up the sage and add it to the pan along with the breadcrumbs, then cook until golden brown. Place the pasta in a large serving bowl, top with the breadcrumbs, grate some parmesan cheese on top and drizzle with some olive oil. Your tasty turkey pasta is now ready to serve.
