'Genius' breakfast samosa recipe from chef is 'pure heaven'




A chef has taken the internet by storm with her innovative fusion of a classic full English breakfast and the traditional Indian snack samosa, creating an air fryer sensation.

Emily Scott, author of the culinary guide What I Ate For Breakfast, is making waves among food enthusiasts for pairing beloved breakfast fare with the samosa's signature flaky exterior.

Her revolutionary technique has even earned her the moniker 'Queen of breakfast' from admiring fans.

Taking to social media to share her latest creation, Emily said: "BREAKFAST SAMOSAS. Samosas, but make them breakfast!

"Introducing my breakfast samosas: crispy filo parcels which are filled with baked beans, sausage, scrambled eggs and bacon. So delicious!

"You can add any breakfast fillings you like - try adding hash browns, mushrooms, black pudding, cooked tomatoes... the possibilities are endless."

Through her cooking guide, Emily demonstrated how she combines classic elements such as baked beans, eggs, sausages, and bacon, all wrapped in a golden-brown filo pastry cocoon, reports the Mirror.

Aspiring chefs will also need melted butter to achieve the desired crispiness.

The creatively crafted dish has received accolades from avid breakfast enthusiasts online, applauding Emily for her 'genius idea'.

Social media user Laoise raved: "Oh no you didn't. These look sooo good."

Echoing the sentiment, My_favourites_food exclaimed: "What a fab breakfast idea."

Joining in on the praise, Amy, known on her platform as @healthbeet, declared: "Samosas are my new fav."

Begin by folding a sheet of filo pastry in half, then slice into four equal-sized strips. Repeat this process with another piece of filo, ensuring you have eight strips in total.

Take one strip of pastry and fold the bottom corner over, then fold it back on itself to form a pocket. Proceed to fill the pocket with your breakfast filling, but avoid overstuffing.

Fold the remaining pastry over the filling to create a triangular shape, applying a bit of melted butter on the edge to help it adhere. Repeat for the remaining pastry strips, yielding eight samosas in total.

Preheat your air fryer to 180C - alternatively, you can bake in the oven at 180C/200C if an air fryer is not available.

Position the samosas in your air fryer basket or on a lined baking tray. Brush the samosas thoroughly with melted butter, then air fry for ten to 12 minutes or oven bake for 12 to 14 minutes.

Ensure you flip the samosas halfway through so they cook evenly on both sides. Then serve with any dipping sauces of your preference.
